We will be using authentic Fatto A Mano (By Hand) techniques and procedures to make a variety of pasta shapes from scratch.

Over the course of my Culinary Career, I have trained over 50 Chefs to make fresh pasta from scratch, I have been teaching pasta making privately for two years, and with Covid segue into virtual platforms like Zoom to teach since June of 2020. Prior to this, I worked in celebrated restaurants like Chicago RPM Italian, and in Los Angles Felix Trattoria. My pasta recipes are the same as the Chefs use. I developed them over the years, in which I was able to personally produce over 250,000 portions of pasta.
