Bagels
What you'll learn
We will learn what makes a New York style bagel so delicious (it is not the water!), starting with how to knead the dough and how to shape it. After an overnight rest in the refrigerator, you will boil and bake the bagels on your own, which I will demonstrate during our class.

I am a trained pastry chef, having graduated from the International Culinary Center in New York City (now part of the Institute for Culinary Education). What students need
Equipment:
Electric stand mixer with dough hook (if you do not have a mixer, you can knead by hand, it will be a tremendous work out and take you much longer to form the dough)
Ingredients:
active dry or instant yeast
filtered water
bread flour (at least 5 cups worth)
sugar
non-diastatic malt powder (you can purchase the powder from www.kingarthurbaking.com or Amazon but make sure it is "non-diastatic"; do not buy malted milk powder) OR barley malt syrup (generally in most grocery stores)
salt
