I am a trained pastry chef, having graduated from the International Culinary Center in New York City (now part of the Institute for Culinary Education). What to bring
Jelly roll pan or baking sheet
210 g. all-purpose flour (1¾ cups)
25 g. sugar (2 tbsp.)
1/2 teaspoon fine sea salt (or table salt)
113 g. refrigerator cold unsalted butte (8 tbsp. or 1 stick)
3-4 tbsp. ice water
Fruit filling (at least one recipe option will be sent prior to class)
