Pumpkin Gnocchi

Let's make colorful gnocchi!

What you'll learn

We will prepare a variation of the traditional gnocchi, using pumpkin/squash and giving an orange color to the gnocchi. We will also prepare a quick and delicious sauce to top them off made of butter and sage. Don't forget to bring your glass of wine with you!

For over the past 10 years I have been running a small cooking school in Trastevere- Rome welcoming people, travelers, friends and families from all over the world to gather and enjoy their time over learning how to make great Italian food. Even before the cooking school I have worked in many different kitchens around the world but always came back to my Italian roots!

What students need

The items needed are:
Bowl for mixing
Potato masher
Pot of water
Frying pan
Cutting board
Cheese grater
500 g/ 1lb Russet potatoes (high starch potato)*
350 g/ 2 3/4 cup All purpose flour
500g/1lb Pumpkin/squash- butternut or Mantovana**
2 Tblsp of unsalted butter
6 sage leaves
Parmesan cheese
