What you'll learn

Making soup isn't complicated, and everybody loves it. In this class you'll learn how to make a a silken pureed squash soup, and on top, chef Edie gives you all kinds of fun tips and tricks to make a topping to your liking. 

Class is open for all dietary preferences.

Chef Edie, a former picky, understands as no other that learning how to cook involves also learning how to eat. It's all about figuring out what you like to eat, and therefor how to cook it. As a cooking coach she helps people finding their fun in the kitchen and loves to help you understand what's going on in your pots and pans so you can become recipe free in the kitchen.

Chef Edie was one of the first food bloggers of the Netherlands, attended culinary school to spice up her cooking and to learn all is possible. Then she started to teach curious home cooks like herself all the fun and interesting things she had learned. After moving to California, she started to mentor people looking for a lifestyle change, spending more time in the kitchen and encouraging home cooks to become free of recipes. Chef Edie loves cooking with vegetables, and gets her inspiration from all over the world, the Mediterranean area in particular. She is a curious omnivore and hates to waste food.

What students need

knife and cutting boards, 1 large-ish pot, oven, sheet pan, regular or immersion blender or food processor
Ingredients: butternut squash (or pumpkin), onion, garlic, olive oil, ras-el-hanout (Moroccan spice mix), chicken or vegetable stock, lime, cilantro/parsley, pepita's, creme fraiche

    Class with Edie was great! I’ve had a previous class with her and she quickly adapted my skill and made the class informative and educational, focusing on things I may not already know. The soup was delicious! I also learned a technique of balancing with an acid that I carried over to another dish I made this week!
