PASSED: Traditional Italian "no-boil" Pasta
What you'll learn
We won’t be boiling our pasta in this class! We will be cooking it directly in the pan with our sauce. This method of cooking is called “risottatura” and it will make your pasta super creamy. You will learn to make Pasta Alla Zozzona, a traditional Roman pasta made with sausage, guanciale, egg yolks and cheese. This pasta is literally the combination of Carbonara, Amatriciana and Cacio e Pepe, hence the name “zozzona”, “sloppy” in Italian. We will make the recipe together step by step and I will teach you all the tricks to make your pasta like a real Italian! ( Don't worry it can be made vegetarian")

Pasta Alla Zozzona ingredients:
320g/ 3 1⁄4 cups RIGATONI pasta (you can replace it spaghetti, penne or linguine) -200g/ 1 cup GUANCIALE (you can replace it with pancetta or bacon lardons)
-250g/ 1 1⁄4 cup ITALIAN SAUSAGE
-350g/ 3 cups CHERRY TOMATOES
-4 EGG YOLKS
-60g/ 9 tablespoons PECORINO CHEESE (you can replace it with Parmigiano cheese) -200g/ 1 cup TOMATO PASSATA
