What you'll learn
In this class, you will be learning how to make a Blackberry and Beetroot Stripe cake. I will be personally teaching you how to bake this constructed layered cake with multiple layers of butter sponge, blackberry buttercream and beetroot syrup. You will learn basic baking methods involving tips to avoid the most commonly made baking errors. This Blackberry and Beetroot cake, is not only the funky flavours that won me the title of MasterChef 2019, but also has a cool optical illusion centre that will send your guests baffled and confused- like "how the heck did you do that?" Join me for a fun baking class and shoot me with any questions you may have about my whole MasterChef experience. *Don't worry if you don't have all the ingredients. You can still participate!!

Always full of life, it was Larissa's unpretentious mix of confidence and tenacity that won the viewers and judges hearts. Born and raised in Sydney in a big Lebanese family, Larissa says her fondest memories of food start in her grandparent’s peach farm. Food is the key ingredient that bring her large family together. Starting the competition with her ‘PUDDLEcotta’ it was only up from there. Larissa initially focused on the sweet style of creativity, though as the competition progressed everything came together in all styles of dishes. The judges put some of her dishes amongst the best they had ever seen ‘Absolute perfectionists when it comes to combining flavours’ said Gary and ‘She is creative and she’s got that with spades, we’ve seen it week in week out’ said George. “I take a lot of risks, but I do know that most of the time it will work for me. It’s pretty much just backing yourself and trusting that you know this dish works, it’s not too out there.” These risks resulted in high praise coming from some of the world’s best chefs ‘Amazing, Amazing’ Massimo Bottura and ‘It brings you in and wraps you up’ Heston Blumenthal.
What to bring

- 8 eggs, separated
- 2 1/2 cup caster sugar
- ½ cup plain flour
- 1 tbs salt
- Icing sugar
- 350g fresh blackberry, plus extra for decorating
- 2 cups beetroot juice (use a juicer, if not available, use fresh beetroot peeled and sliced thinly instead plus 400ml water)
- ½ tsp citric acid
- ½ cup golden syrup
- 5 egg yolks
- 280g butter, cut into cubes, softened
- ½ cup - 1 cup blackberry puree
